Sunshine Breakfast Muffins

Sets the tone for the day

2 large   Oranges
0.5 cup 125 ml   Water
1   Egg
0.25 cup 60 ml   Oil
0.5 cup 125 ml   Sugar
1.5 cup 375 ml   Flour
1 tsp 5 ml   Baking Soda
1 tsp 5 ml   Baking Powder
1 tsp 5 ml   Salt

1. Cut one orange into quarters, and place it all in a blender. Roll the other orange firmly around on the counter, then cut in half and juice it into the blender. Add the water, egg and oil into the blender as well and mix until smooth.

2. Mix the rest of the ingredients into the blender, and blitz a couple times, until all incorporated. Spoon the batter into lightly greased muffin tins, and bake at 375 for 15-18 minutes. Makes around 9-12 muffins.

A healthy shot of vitamin C, tolerated first thing in the morning.
