Tabbouleh Salad


A cool minty dream

Ingredients
1 cup 250 ml   Couscous
2   Tomatoes, diced
1 cup 250 ml   Cucumber, diced
1 cup 250 ml   Flat Leaf Parsley, washed and chopped
4   Green Onion, diced
0.25 cup 60 ml   Mint, washed and chopped
0.25 cup 60 ml   Lemon Juice
2 tbsp 30 ml   Olive Oil
2   Garlic Cloves
0.5 tsp 2 ml   each, Salt and Pepper
 
1. Bring a medium sized saucepan with a cup and a half of water to a boil. Once the water is boiling, stir in the couscous. Remove the pot from the heat, and cover for about 5 minutes. Stir the cooked couscous around, and transfer to a large salad bowl.

2. Meanwhile, wash and finely dice the tomatoes, cucumber, green onions, parsley and mint. Add these veggies into the couscous. Whisk together the lemon juice, olive oil, minced garlic cloves, salt and pepper. Drizzle the dressing over the tabbouleh and stir to coat.
