Tabbouleh Salad

1. Bring a medium sized saucepan with a cup and a half of water to a boil. Once the water is boiling, stir in the couscous. Remove the pot from the heat, and cover for about 5 minutes. Stir the cooked couscous around, and transfer to a large salad bowl. 2. Meanwhile, wash and finely dice the tomatoes, cucumber, green onions, parsley and mint. Add these veggies into the couscous. Whisk together the lemon juice, olive oil, minced garlic cloves, salt and pepper. Drizzle the dressing over the tabbouleh and stir to coat.
