Thai Noodle Salad




Ingredients
1.5 cup 375 ml   Cooked Asian Noodles-raman, udon etc...
2 tbsp 30 ml   Sesame Oil
1 cup 250 ml   Carrot, grated
1 cup 250 ml   Bean Sprouts
4   Green Onions, sliced
1 cup 250 ml   Cucumber, chopped
1 cup 250 ml   Celery, chopped
1 tbsp 15 ml   Orange Juice
3 tbsp 45 ml   Soy Sauce
1 tsp 5 ml   Hot Sauce
0.5 cup 125 ml   Peanuts
0.25 cup 60 ml   Cilantro, torn
1 cup 250 ml   Red Pepper
20   Prawns, peeled, cooked and cooled

 
1. Cook noodles in boiling water for 5-8 minutes, then drain, toss with sesame oil and set in a bowl to cool. Likewise, shell and devein the prawns and steam them until pink and opaque (3-4 minutes) in a small saucepan. Drain and set aside to cool.

2. Peel carrots and finely chop the carrots, celery, cucumber, green onions, and red pepper. Stir into the noodles and the cooled prawns. Mix together the orange juice, soy sauce, and hot sauce.

3. Toss the salad dressing into the salad. Garnish with chopped peanuts and torn cilantro.
