Thai Noodle Salad

1. Cook noodles in boiling water for 5-8 minutes, then drain, toss with sesame oil and set in a bowl to cool. Likewise, shell and devein the prawns and steam them until pink and opaque (3-4 minutes) in a small saucepan. Drain and set aside to cool. 2. Peel carrots and finely chop the carrots, celery, cucumber, green onions, and red pepper. Stir into the noodles and the cooled prawns. Mix together the orange juice, soy sauce, and hot sauce. 3. Toss the salad dressing into the salad. Garnish with chopped peanuts and torn cilantro.
