Turkey and Spinach Enchiladas

A Delight

2 cups 500 ml   Ground Turkey
1 tbsp 15 ml   Oil for frying
2 tbsp 30 ml   Curry Powder
1 tsp 5 ml   Cumin powder
1 tsp 5 ml   Black pepper or Garam Masala
2   Apricots
1.5 cup 375 ml   Grated Mozzarella or Asiago cheese
15   Spinach Leaves
6   Tortilla shells
1 can   Tomato Sauce
1. Season the ground turkey with the curry, cumin and pepper and fry in large pan, over medium heat until cooked.

2. Chop the apricots into small wedges, and wash and tear spinach.

3. Fill the tortilla shells with a heaping spoonful of ground turkey, some apricot wedges, a handful of spinach and grated mozzarella and roll up into a wrap.

4. Arrange the wraps side by side in a large baking dish and cover with the tomato sauce and any remaining cheese.

5. Bake for 30-40 minutes in a 375 degree oven.
