Veggie Samosas

1 large   Potato, cooked and diced
0.25 cup 80 ml   Cauliflower, finely chopped
0.25 cup 80 ml   Green Peas, cooked
1   Onion, finely chopped
1   Garlic clove, minced
2 tsp 10 ml   Ginger, grated
1   Green Jalapeno, chopped
1 tsp 5 ml   Curry powder
0.5 tsp 2 ml   Salt and Pepper
1 tbsp 15 ml   Lemon Juice
2 tbsp 30 ml   Cilantro, chopped
1 cup 250 ml   Oil, for deep frying
2 tbsp 30 ml   Butter, for sauteing
1. Heat butter in a large skillet. Add potato pieces, onion, peas, cauliflower, garlic, ginger, jalapenos, curry powder and salt and pepper and saute for 2-3 minutes. Remove from the heat and stir in the lemon juice and cilantro.

2. Roll out the samosa dough as per the recipe in "Beef Samosas", and spoon the potato-cauliflower filling onto each round. Wet the dough edges and fold over on itself.

3. Heat oil in large skillet until fairly hot and deep fry the samosas until golden. Serve hot with sour cream and mint, or a sweet chili sauce.
