Watermelon and Feta Summer Salad

Beat the Heat

4 cups 500 ml   Watermelon, cubed
1 cup 250 ml   Feta, crumbled
3 tbsp 45 ml   Mint, chopped
1 half   Red Onion, thinly sliced
3 tbsp 45 ml   Olive Oil

1. Cube watermelon, ensuring all seeds are removed. Set watermelon pieces aside in a large salad bowl. Finely slice half of a red onion lenghtwise and add to the watermelon. Crumble in the feta, and the roughly chopped or torn mint. Drizzle in the olive oil and stir to combine. Eat well chilled and beat the heat.
